Description: This knife was made by Seattle native, Bhakti Sa. Bhakti has been apprenticing under David Lisch and it is clear he has been working hard. His understanding of chef's knives is exceptional.
This santoku knife is likely to become the primary knife used in your kitchen. The santoku is the traditional general purpose chef's knife used in Japan. This comfortable design is a fantastic multipurpose chopper. The Santoku style has quickly become the new favorite for chefs in the West. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. This chef's knife is a perfect choice for detail-oriented tasks such as chopping garlic, mincing shallots, and the like.
Bhakti forged the pool and eye pattern damascus beginning with 1080 and 15N20 carbon steels. This ensures a keen long lasting edge as well as exceptional beauty! The high contrast pattern is immediately captivating. The blade and bolster are both made from one solid piece of damascus. Though integral knives are regularly done in production work, creating an integral bolster in a custom setting is extremely difficult and shows the maker's skill at its best.
Bhakti Sa formed the elegantly contoured handle from presentation grade stabilized maple burl. The workmanship is beautiful, and the wood chosen is gorgeous! The light toned, convoluted wood is entirely captivating! Contours ensure a comfortable and safe grip. Alternating silicon bronze and black G10 spacers set between the handle and integral bolster assist the wood to adjust to temperature and humidity changes. By using stabilized woods, Sa ensures the knife will hold up well to the high demands of either a professional or home kitchen.
A gorgeous piece built for serious use, yet one of the more dramatic kitchen knives that I have come across.
