Description: Sujihiki are slicers or carving knives that are well suited for slicing and portioning steaks due to the extra long blade. Extremely sharp, this slicer is well suited to preparing sushi and sashimi.
Akaishi chef's knives feature a 73 layer blade of exquisite beauty. 36 layers on each side of the blade are forged from SUS304 and SUS310 high nickel stainless steel. This combination of stainless steels creates a rich captivating pattern of alternating matte gray and silver throughout the surface of the blade. Each one is a unique design -- a true work of art. The core is a high carbon alloy tool steel called SKD11, which takes and holds a razor edge -- ensuring a silky and effortless cut. Many people find SKD11 to be a perfect balance of limited rust resistance with exceptional edge holding. It is hardened to Hrc 62-64 for superior edge retention. This gives the blade an exceedingly tough, long lasting and chip resist edge that is relatively easy to sharpen.
A pinned stainless steel bolster separates the blade from the handle. The triple riveted tang runs the full length of the handle for strength and longevity. The nicely rounded, comfortable handle is made from resin impregnated hardwood. This 'pakka wood' combines the best attributes of natural wood and resin, and holds up exceptionally well to the rigorous demands of a home or commercial kitchen.
