Description: This exceptional chef's knife was made by Adam Sigal (Station Knives) in Portland, OR. Adam calls this shape the Byron. It is a 5-3/4 inch chef's knife with a nice wide blade. It is designed to be an all-around kitchen knife for people that find larger knives unwieldy or just too much of a commitment to clean. Adam originally designed this knife for his father, who continues to use it every day. Adam learned knifemaking while at renowned knifemaking workshop Cut Brooklyn. His understanding of knife styles as well as his appreciation for good fit and finish is clear! Whether a home gourmet or a professional chef, this 5-3/4 inch chef's knife is a perfect choice when chopping, slicing and dicing. It provides plenty of finger clearance over a cutting board with just the right amount of rock.
The blade is formed from ultra-high performance AEB-L stainless steel. It has a slight convex grind to facilitate food release.
Beautiful walnut wood scales are set on black G10 spacers -- adding dynamic contrast! Two mosaic pins lock the handle in place. The knife is accompanied by a handmade walnut wood saya.
