Description: Bill Burke, who was honored as a Master Smith June 2008, creates hunting knives and culinary knives. This high performance small chef's knife is a perfect choice as a primary knife in the kitchen for a chef who feels more comfortable working with a smaller knife. It is also a perfect choice when doing precise tasks such as slicing tomatoes and portioning proteins.
The blade was hand forged in a technique known as san mai. A dramatic damascus is forged to the sides of a high performance SG2 PM stainless steel. The bright, swirling pattern created from stainless steel and nickel is offset by the darkened SG2 core. SG2 is a super-steel created by Takefu in Japan. It ensures exceptional edge holding with a keen, superior edge.
The traditional Japanese octagonal handle is formed from Macassar ebony (Diospyros celebica). This south east Asian hardwood has warm tones and a gently turning, straight grain. A pakkawood ferrule and a stainless steel spacer add excellent contrast. This traditional handle is very comfortable when used for extended periods and is a perfect choice for either professional or home kitchens. This nimble knife has perfect balance and feels exceptional in the hand.
