Description: This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
Don Nguyen is a full-time Materials Science and Engineering student at the University of Arizona. Knifemaking is something that he does in his spare time -- though it is clear that he is a maker to watch. He is clearly driven by a design sense that is rarely found.
The blade of this elegant knife was initially forged by Sabatier in the early 1900s. Several early Sabatier blades were found which had never been turned into finished knives. Don re-ground the blade, thinning it, and heat treated it with a differential heat treatment. The results are absolutely spectacular. The blade features a distal taper for perfect balance. The handle encourages a pinch grip for optimal control.
The integral bolster moves into a mammoth molar ferrule, which in turn moves seamlessly into the ancient bog oak handle. The stabilized woolly mammoth tooth has a dramatic mix of blue and earth tones. The dark toned wood is several thousand years old and has been submerged in bog in Russia. The handle is nicely sculpted for a comfortable, secure grip.
This knife is absolutely spectacular!
