Description: In size, the Ao-Zora 6 inch Utility Knife is between a chef’s knife and a paring knife, but its blade is narrower and straighter. It's perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Its slightly curved belly enables it to do moderate rocking cuts. It’s nimble enough to peel an onion in hand, then slice it up in short order. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
Ao-Zora knives feature a premium Super Blue (aogami super) carbon steel core. This is surrounded by protective SUS410 stainless steel. There is probably no finer combination of durability and "sharpenability" than Aogami Super steel. The fine grain particulates in this steel allow a beautifully fine edge to be attained, which will then be extremely durable for a long time. The combination of a high performance carbon steel core and stainless sides also provides easier care. It is hardened to Hrc 64 for superior edge retention. This gives the blade an exceedingly tough, long lasting and chip resistant edge that is relatively easy to sharpen. While it is much easier to care for this knife than a full carbon steel knife, it still must be hand washed and dried to avoid rusting the core. We recommend using camellia oil to avoid rust.
The blade is exceptionally thin and cuts with virtually no resistance. A convex grind assists food release, minimizing suction when slicing more delicate, moist foods.
A stainless steel bolster separates the blade from the Western style handle. A triple riveted tang runs the full length of the handle for strength and longevity. The comfortable handle is made from Micarta. Micarta holds up exceptionally well to the rigorous demands of a home or commercial kitchen and does not shrink over time.
