Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, results in edge holding that is far beyond other knives. This is a knife that will astonish you with its lightness, maneuverability and stunning good looks.
The Japanese-inspired chef's knife (known as a gyuto) is well suited for use as a general purpose culinary knife -- from chopping, to slicing and dicing -- from fruits to vegetables and meats, this chef's knife is a great choice.
Bill began the blade by forging a many layered river of fire pattern damascus from carbon steels. This is a pattern that Bill invented and has become a hallmark of his work. The blade is distal tapered for a perfect balance. The spine is inlayed with hand textured 24k gold (approximately 3/4 oz). The resulting blade is among the most captivating kitchen knives that I have ever seen! The heat treatment follows the formula developed by Bill Burke in conjunction with Mastersmith Ed Fowler and creates some of the sharpest, longest lasting edges found anywhere.
The handle is formed from ancient bog oak. This wood has been buried in a Nordic peat bog for thousands of years. It was radio-carbon dated as 7260 years old. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with the tannins in the wood, gradually giving it a distinct dark chocolate color. A front spacer formed from polished buffalo horn adds a subtle contrast. The front bolster and spacer add tremendous contrast. Both are formed from solid 24k gold (weighing approximately 1-1/2 oz and 3/4 oz respectively). A ridge travels along the right side of the handle, drawing inspiration from the traditional Japanese 'Wa' handle.
The knife has perfect balance and will be an utter joy to use. It is among Bill Burke's masterworks to date.
