Description: Bill Burke, who was honored as a Master Smith June 2008, creates hunting knives and culinary knives. His work is frequently noted as being among the best in the world -- both in his understanding of design and the keen, long lasting edges. His knives are a pleasure to hold and a joy to use.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board.
The blade was hand forged in a technique known as san mai. A dramatic stainless nickel damascus is forged to the sides of a high performance SG2 stainless steel core. The polished surface is extremely dramatic.
The heat treatment followed the formulas developed by Bill in conjunction with Mastersmith Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere. The blade is triple quenched and triple tempered for optimal edge holding and durability.
The handle is formed from extremely rare high Arctic Muskox horn. Muskox horn is one of the most rare and majestic handle materials used in the knife world. The highly polished musk ox horn has a unique grain structure that immediately grabs the eye. A 'bolster' formed from carbon fiber provides a nice contrast. The handle is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak.
The knife has perfect balance and feels exceptional in the hand. Tremendous fit and finish throughout!
