Description: From carving roasts to slicing turkey and other fowl, the long, slender slicing blade of the Ohishi V5 Sujihiki is a kitchen essential.
The Ohishi VG5 series features hand ground, three layered (san mai) blades with western handles. The satin finished (migaki) face of the blade is convex ground to reduce sticking and friction during cutting. These light weight, perfectly balanced knives are sure to be a favorite in your kitchen.
The blade is formed from VG5 stainless steel, hardened to 59-61 Hrc, clad with softer SUS410 stainless steel. This technique, known as san mai, produces a knife with a keen, durable, long lasting edge. Takefu VG5 is very similar to the better known VG10, but without added cobalt. The fine grain makes Ohishi VG5 one of the easiest-to-sharpen stainless knives we have found in its price range. This knife has a superior, keen edge and is sharpened to 12.5 degrees on each side.
The black pakkawood handle is nicely rounded for a secure, comfortable grip. It is slightly larger than many Japanese knives. Stabilized wood handle scales are triple riveted to the full tang for strength and durability. Following in the best tradition of knife making, a forge-welded steel ferrule ensures that food particles cannot become lodged between the tang and the handle.
Ohishi VG5 knives are light, nimble and perfectly balanced. They are a terrific knife for the up-and-coming chef.
