Description: Sujihiki are slicers or carving knives that are well suited for slicing and portioning meats and fish due to the thin, long blade. Extremely sharp, they are also well suited to preparing sushi and sashimi. The extended blade length allows you to slice with one long stroke, instead of sliding the knife back and forth in a sawing motion. The result is a superior, clean cut.
The beauty of the SLD line by Yoshikane is matched only by its performance. Each knife is meticulously hand forged to create a lasting work of functional art. The two tone blade is produced by two different etching processes creating a dramatic high contrast between the Kiriba (blade bevel) and the flat of the blade. This creates a smooth surface for the blade to slide through material and a subtly uneven surface to help release foods being sliced. The blades are comprised of a hard inner SLD stainless steel core clad in stainless steel damascus (suminagashi). Because SLD is a relatively low chromium stainless steel, we recommend drying the knife after use. The mesmerizing suminagashi pattern flows freely on both sections further enhancing the unique styling of this line.
The hand forged blade features a rounded Mune (spine) and choil for secure, comfortable grip. The handles are made from enju wood with ferrules of black buffalo horn. The ambidextrous handles are octagonal at the top and rounded at the base, resulting in a comfortable, elegant shape that is pleasing to the eye and hand.
