The Japanese-inspired chef's knife (known as a gyuto) is a perfect general purpose culinary knife -- from chopping, to slicing and dicing -- from fruits to vegetables and meats, this chef's knife is a great choice.
The blade is among Bill's masterpieces to date. It is a pattern that he calls Twin Rivers. This modification of his renowned River of Fire design has two rivulets travelling across the blade. The high contrast of the damascus pattern is immediately captivating from a distance and holds attention upon closer inspection. The blade is distal tapered for a perfect balance. The spine is inlayed with melted 24k gold and has 'drips' of gold that travel down from the spine. The resulting blade is among the most captivating kitchen knives that I have ever seen!
The heat treatment follows the formula developed by Bill Burke in conjunction with Mastersmith Ed Fowler and creates some of the sharpest, longest lasting edges found anywhere.
The handle is sculpted to ensure a comfortable, secure grip, swelling at the palm and end. The stabilized cottonwood burl has tight, swirling grain patterns throughout.
The knife has perfect balance and will be an utter joy to use. It is among Bill Burke's masterworks to date.
