Description: This meat cleaver is the work of Arkansas knifemaker Bob Dozier. Dozier's current wait list is a bit over three years. Bob has always enjoyed focusing his work around the high performance hunting knife and working folders. Occasionally Bob enjoyed making kitchen knives like this cleaver as well! This cleaver has been in a private collection since it was made. It has been meticulously cared for and by all appearances it could have been made yesterday. Though Dozier knives are currently made by Dan Crotts, this knife was made by Bob Dozier, himself.
Meat cleavers feature a big, thick blade suitable for processing larger cuts of bone-in meat or breaking down whole poultry. Use it to separate spare ribs or cut a chicken down to size. Chopping beef for stew is another great use for a cleaver. The back of the blade can be used to tenderize meat as well. A cleaver comes in handy for chopping up meat and bones for stock and can even work its magic on whole lobster. As you might expect, a blade that gets this kind of use must be tougher and thicker than a general purpose chef's knife.
The tall 5-1/2 inch blade is made from O1 carbon steel and will have excellent edge retention. The blade features an antiqued finish on the flats of a blade and a satin finish on the hollow ground bevels. Dozier's signature is engraved on the left side of the blade and the steel is engraved on the right side of the blade. A classic butcher's hole at the top of the blade allows the cleaver to be easily hung from a hook on the wall.
Stabilized walnut scales are secured to the full tang using two large brass pins. By using stabilized wood, Bob ensures the handle will hold up to the rigorous demands of the kitchen. The handle is nicely domed and contoured to provide a comfortable grip. A brass lanyard tube was included in case extra retention is desired.
Bob has included a green Kydex sheath to protect the edge during storage or transportation.
