Description: Salem Straub is a bladesmith living in Washington State. He has a tremendous amount of skill at the forge and a great sense of design. This damascus chefs knife brings together his skills at their best! Given the incredibly complex steel, it is no surprise that this knife won Best Damascus at the 2019 Oregon Knife Collector's Association Show.
Chef's knives are the general purpose knife in the kitchen. From slicing tomatoes to chopping onions, this knife will get the task done perfectly. It is sure to be a kitchen favorite.
Salem began forging this chef's knife beginning with 1080 and 15N20 carbon steels. The central section of the blade is formed from multiple bars of high complex damascus knotwork. The edge and spine are explosion patterns. The damascus for this blade was forged specifically for this knife, allowing the pattern to follow the edge and spine and meet at the tip. The fine patterned damascus is immediately captivating and draws attention for closer examination. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust. By forging closely to shape, he ensures optimal grain structure for a keen, long lasting edge. The shinogi blade grind (often called an S-grind in the West) features a transition line approximately 3/4 inch above the cutting edge where the angle of the blade grind changes. This results in a thin, high performing blade with excellent food release. Both the spine and curved choil are rounded for a comfortable grip.
The handle is formed from presentation grade Arizona desert ironwood (Olneya tesota). This rare piece of wood combines the yellow sapwood with warm brown and black tones. It is nicely sculpted for a secure, comfortable grip. The dense wood will hold up beautifully to the heavy demands of either a home or professional kitchen. The handle is finished with an integral forge welded mosaic damascus bolster.
