At 5-1/4 inches, this is an extremely comfortable and easy to control chef's knife to work with.
Miller's attention to detail shines through this elegant kitchen knife. The 5-1/4 inch long blade was forged to shape from 1080 and 15N20 carbon steels. The high contrast pattern immediately grabs attention and ensures a keen, long lasting edge. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation.
Handle scales are formed from presentation grade curly koa. The stabilized wood is finished with 10 coats of urethane, hand rubbed to a 2 micron finish. This resilient wood holds up extremely well in the harsh environment of the kitchen. Scales are epoxied with blind pins and are set on a full tang for strength and durability. By skeletonizing the tang, Miller has greatly reduced the weight, reducing fatigue when the knife is used for hours at a time. Like other kitchen knives, this knife should not be put in a dishwasher.
