Description: Chef's knives are the go-to knife for both professionals and home cooks. Longer and slimmer than the santoku, this knife is ideal for slicing meats and vegetables. It makes a great general purpose chef's knife. The long blade is needed for the sawing motion required to cut meats and the slim profile keeps the weight low and the balance right. A deep belly with plenty of finger clearance makes it perfect for a rocking chop.
This knife was handmade in 2005. It has been in a single private collection and has been meticulously cared for. It has never been used to cut and has been stored it its original box. By all appearances, William Henry could have made it yesterday.
William Henry's Pro Collection was built to the most rigorous standards of the commercial kitchen. The knives feature a laminated blade made from multiple layers of steel surrounding a core material of the finest alloy in cutlery. The core (edge material) is pure ZDP-189, a super-stainless powder metal die steel created by Hitachi Metals of Japan. This alloy achieves a hardness of RC 65-67, which translates to superior sharpness and edge retention (note that most kitchen cutlery, even fine cutlery, rarely reaches a hardness above RC 57). The exterior layers are stain finished 420 stainless steel. These supportive layers create a blade that is superb in terms of sharpness and flexibility.
The blade was completely ground and honed by hand to an incredibly sharp edge. With proper maintenance, this knife will maintain a good working edge 5-6 times longer than typical high-grade cutlery and can be sharpened in seconds, rather than minutes.
Presentation grade handle scales are set on the full tang for strength and durability. They are secured with fiver stainless pins. A stainless steel bolster meets seamlessly with the presentation grade wood in an elegant arc. This knife is a perfect choice for the rigorous demands of either a home or commercial kitchen.
The knife is accompanied by its original box, factory sharpening card, and information sheet. All are in new condition. This is a very rare find and a grail knife.
