This knife is not only extremely sharp (and stays that way for a long time), but it is also a beauty.
The blade pattern is really something to rest you eyes on.
It is very well balanced and does a great job in the kitchen.
The only thing I'd like to add for further development is that the blade could be a bit thicker at the back and I would like to have it available also in a slightly bigger size (I have big hands).

I am very happy with this knife. I use it in my job as a prep cook, so it really gets a workout. I've had it for six months now and the only maintenance is daily honing with a steel. It still has an extremely sharp edge, which is impressive given the amount of use it gets. I find the santoku knife style easy to use and always feel in full control of the blade. I purchased a plastic blade guard with the knife -- simple yet very effective. My interactions with Epicurean Edge / BladeGallery have been excellent. Thanks!
