Great little knife (8/10/2007)
The blade is beautiful and veeery sharp. I love the handle with it's D shape, similar to a Shun handle but it's not total rounded fitting in the crease of your fingers.

what a fabulous knife!!! (7/2/2007)
This is possibly one of the best kitchen knives i have ever owned. Since i bought it my sabatier carbon steel knives have been relegated to the "b" team.

This knife rocks! (2/28/2006)
Man what an amazing knife. I've owned a lot of knives, and this knife is a precision instrument. I can't believe how sharp this thing is. The hammer finish is awesome as well. I think it's one of the best knives I've owned. Along with my mac santoku:)

A MUST buy knife, and a MUST buy from company! (2/14/2006)
A knife like this is hard to describe!!! Starting with the handle, it's a beautiful light wood (Ho Wood) with a "D" shape to the grip. I own a KAI Shun Classic 8 in Chefs knife I purchased from a local cutlery store with a similar "D" handle to it. VERY comfortable, and makes for a sure grip.
Now to the blade, this deserves a paragraph of it's own!! I looked … and looked at the pictures on this site of this hammer finish and couldn't determine if it was or was not 'dimpled' by the hammer. And it IS! This hammer work provides a place for food to fly off to the side as you dice and chop, and also a place to put your fingers. This blade was obviously handmade! The whole thing was hammered, then the razor sharp edge was ground down. Each knife looks different… upon comparing my knife to the example shown on this site, I see slight changes in where the black meets grey, meets polished edge.
This site carries many beautiful knives from Japan.. and a good % of those come with a Damascus finish (the wavy, almost wood grain finish to the handle)… but these are a ONE OF A KIND!!!
I work at a resturaunt in the Tri-Cities, Wa and am looking forward to using this knife at work!!
Epicurean Edge sent the knife by USPS Express mail (Extra $$) on Sunday and it arrived today (Tuesday). VERY fast shipping, and will do business with again.
Thanks Epicurean Edge!
