Sakon Damascus Chef's Knife - Gyuto - 8 1/2 in.

Still great after 4.5 yrs
Luong  Santa Barbara, CA, USA  2/19/2012

Edge holding is better than my SKD & ZDP-189 blades (HRC 64+). This knife feels around 61-62 hrc but its vanadium carbides seem to cut and keep on cutting as well as zdp & skd, while without suffering micro-chips. Recommend - convex edge with mirror blade would greatly enhance cutting & slicing also keep foods from sticking to the blade.

M5
Garrett  Seattle  9/10/2010

If this knife was a car it'd be a BMW M5, a big beautiful performer. Though not as light and nimble as an Asai, it's perfect for someone interested in a cruiser over a two seater sports car.

Breath taking
Luong  Redmond, WA  6/20/2007

Beautiful damascus, top notch F&F. Mine has a crack at the blade and neck, brought it back, got reshaped and mirror polish sharpen. Well, it's no longer stunning beautiful but a razor edge with smooth push/pull cut easily out-weight to sticky edging (raised damascus patterns). The handle is great for pinch and (even) hammer grip. Note - the blade is a tad thicker than other standard gyuto. It's now my wife's favorite knife.
For a killer look and low maintenace, buy this knife. If you have $ and want the best, buy Hattori KD.
