Amazingly well made knife (9/18/2010)
The quality of materials and workmanship in this knife leave nothing to be desired. It's weight is much more balanced fore to aft than the 10 inch shun Classic Chef's (which adds .3oz to the blade, and removes .1oz from the handle). The nicer SG2-PM steel is able to be much harder, thinner, and more flexible than it's VG-10 counterparts.
Durability over the last 2 years using this knife in a Professional kitchen 45-60hr a week has been wonderful. Sharpen every few weeks up to 12000 grit, hone as necessary (less than daily unless cutting hard rind cheeses and produce) and that's it! Has been knocked off prep surface by careless employees several times and has received only small chips in the butt of the pakkawood handle that sanded out smoothly (tip and cutting edge remained perfectly undamaged). Fit and finish were perfect out of box, and have remained so. Handle has awesome grip for a person with large hands, and the contour allows a relaxed hold. This knife would be hard to beat at this price by any other manufacturer; quite the deal, quite the knife!
