Akifusa Chef's Knife - Gyuto - 8 1/4 in. (210mm)

Great knife
Charlie  Alabama, USA  3/22/2011

I heard about the Akifusa on a knife forum. It got good comments there. I wanted to get it for the SRS-15 PM steel. I have 8" chef knives by Shun with SG-2 steel and a Henckles Twin Cermax w ZDP-189 steel. These 3 chefs will give me a good test of the steel as well as the tempering abilities of the makers. The Akifusa was shaving sharp OTB. At 3 mm thick on the spine, it is a little heavier than the Cermax @ 1.8 mm and about the same as the Shun Elite KO. It balances right at the bolster which is perfect for me. The T Cermax is a little handle heavy, as are a lot of German knives. This knife went through carrots, an apple, onions, probably better than the others. I'm really looking forward to using it in my kitchen.
As for fit and finish, I must have gotten a special pick or Akifusa has upgraded their finishing metal and wood workers. The handle has slightly rounded corners down its length, top and bottom. The wood to metal fit to the tang is as good or better than a Tojiro. The rivets are smooth, polished, and flush to the pakkawood which looks like aged walnut or mahogany. I examined the blade edge with a 10x jewelers loupe and found no knicks or blemishes on the edge. The blade has a nice polish and fits a pinch grip like it was made for me.
So far I am completely pleased with this 210mm chefs knife.
Last, the service in ordering and help in selecting this knife was tops. I had to decide between this one and a Bu-Rei-Zen. Drew took a lot of time to help me with the choice. His knowledge and advice were so helpful.
After the knife came I had a question about the Ohishi Waterstone I had also ordered and Joe taught me about that.
A great buying experience.
Oh yeah, I too, love that hammered engraving on the blade.

All you could want in a 210

I will agree that the handle could be a tad larger, but overall this gyuto is fantastic. I have the 240mm, too, and this is just more of the same...well, less of the same! Terrific knife.

wonderful steel, good buy
Richard  MA / USA  2/23/2009

Nice steel, shipped good & sharp. Very light. Slight blade curve from handle to tip, and handle workmanship not up to the steel quality (the tang sticks out a bit from the handle, which is on the skimpy side. All in all, very impressive hard blade, good value, but I'd have preferred paying a bit more for a somewhat more substantial handle & better fit & finish.
