More than pretty (12/26/2007)
Okay, I went to buy another Kumagoro Nikiri after my daughter claimed mine and I saw this one -- the Asai Damascus -- and couldn't help myself, It's just too beautiful and feel s wonderful in the hand. I took Drew's word for it - the one I bought seemed really sharp but I left the store wondering if I'd gone a little over the top because I really, really loved that Kuymagoro Nikiri.
It's fabulous, buy it, just do it and you'll be happy. And if you just have to have a carbon Nikiri then get the Kumagoro, it's fabulous too - with a much different but very cool look.
Now I take this Asai knife out, lay it on my block and start coming up with things I can prepare for dinner, my icebox might be full but maybe just because… I'll go buy something else to just experience the knife one more time.
When I'm cubing an onion or tomato and go to do the horizontal slices, so smooth, so in control and with ease, the knife never resists and it just feels safer even though it's so crazy-sharp. The handle is lovely, but also very versatile -- I love D handles but this immediately won me over, nothing to get used to, nothing to learn, just start cutting...Yeah…
