over the past few years i've become a devotee of the handmade japanese knife world. there is simply nothing comparable in terms of feel and function. in a review of the Tanaka Utility - Fruit Knife - 5 1/4 in. (which i also own and adore), the gentleman writes: "it just makes me feel so good to use this exquisite damascus blade that has been crafted to such high standards of fit and finish. It elevates a simple kitchen task to a pleasurable event." i couldn't say it better. there's just something exquisite about the delicacy of this blade. fine enough for the most delicate paring tasks, yet just enough additional heft over a traditional smaller "paring" knife to do some light chopping. it fills a niche in between my parer and my tanaka utility and santoku. yes, it's pricey. but it's the joy of using a tool that has been forged with such devotion, of handling something that comes down from so long a history of usable art. add to that epic edge's extraordinary service, and it's so worth the extra $$.
