Initial Rerview (4/17/2009)
I just received this knife today I wanted to post an initial review and then follow up with comments on performance after a weekend of cooking and prep work with it. To start I want to praise EE's professional service and quick shipping. As always, their shipping was exceptionally fast and the knife was padded adequately and included purchase, build and care literature.
The knife blade itself is well made and exceeds what I've read about Yoshikane knives. You can't help but appreciate this knife's feel and quality for this price. The blade's look and feel says "My maker knew what they were doing and I'm ready to get down to business". Not flashy or flawless in its build, but inspiring and solidly made. One initial disappointment that I do have with this knife is the build of its Western Handle. The Paakawood is decent quality, but there is a gap between the tang and wood on one side. This gap spans over half the length of the tang and will allow moisture and food to seep into it. This is a significant quality flaw and though this will not take away from its overall functionality, it really is an unacceptable drawback for a knife at this price and a blade of this quality.
Once again, I'll be using this knife over the weekend and I'll post my overall performance thoughts next week. I also received a Sakon Damascus Santoku today and I have a set of Shun Elite blades with SG-2 cores that will be cutting alongside this Yoshikane when I and a group of friends are cooking. This should give a good hands-on comparison from several seasoned cooks.
