I tried hard not buying this knife for so long, but when I saw it come onsale during Cyber Monday, I couldn't say no. Originally I had been looking at a smaller Akifusa, but I couldn't justify the purchase considering I already own a Takeda Gyuto of similar size. However, when this knife popped up, it filled the gap between my 8.5/9 Chef's from Devin Thomas, and my Takeda.
The knife is fairly sharp OOTB, I wouldn't say it's sharper than the Takeda, though. I touched the edge up on a 8k, 10k stone, and stropped the blade before using it. It definitely takes on a sharp edge.
I haven't had a chance to use this knife in a long cutting session, but it looks like the edge will hold quite well.
The only reason why it gets 4/5 is because the fit and finish was not perfect. The handle and the wood have minor sizing issues, nothing that anyone else would notice, but being a knife nut, I really had to dig to find something wrong with this knife.
