Waited 6 months for one of these. I have a lot of "fine" knives, the kind you get from the national "gourmet" kitchen stores. And in my ignorance, I thought they were really great, until now. While those knives are fine for many things, they don't hold a candle to this blade, both in beauty and execution. The weight and balances are both superb and the cutting edge retention and glide are both really tip top and smooth. Once ya go to hand forged PM, it's very hard (pardon the pun) going back to the machine made mass produced somewhat softer blades. Share it with the wise, the talented and the attentive; it's wicked sharp, thin and should be handled with care and used only on appropriate surfaces to avoid damaging the well honed edge. I vacillated on this grade or the non PM grade below. Get this one if you can, you won't regret it for a second after you use it - well worth the premium price! I suggest you also discuss buying their Japanese Hinoki wood cutting board to go with it, as it is more forgiving on the blades of all knives. Enjoy!

The title says it all! This knife is amazing. Its so light and nimble, it just glides through the food effortlessly. I was showing the knife to one of my friends recently. They started to chop carrots up and accused me of handing them soft carrots because of how easy it was for them to cut.
I highly recomend this knife!
