First, an admission: I've never filleted a fish in my life, and I work with meat very little. That said, I've taken a chicken or two apart with this knife -- it was a thrilling experience. The knife is SO beautiful, and such a pleasure to hold in the hand. It arrived extremely sharp, and it slices through poultry joints like they're barely there. It may be sitting in my drawer most of the time, but first sign of the zombie apocalypse, this is the knife I'm taking with me.

Don't let the size of this knife turn you away. It's extremely versatile in that it functions like an extension of your hand. Obviously great for filleting small fish - it's intended purpose - but it's also great for accurately deboning and breaking down poultry, and even large pieces of beef and pork. I have even taken apart and carved a 16 lb turkey with this knife, in about 7 minutes!
