I've been using this knife for a couple of weeks now and I'm very impressed. I've several other J-knives known for their cutting abilities but this one has become my goto knife. The OOTB sharpness was good but not great, but it took an amazing edge once I put it to the stones. The first thing I cut with it was a big sweet onion. I was stunned how easily it made the horizontal cuts. It also has the least sticktion of any of my knives. The cladding does discolor readily but haven't noticed any discoloration on the food. Got a little of that steel smell, but only if you put your nose right up to the blade (again, no smell on the food). Very happy, will buy others from this line.
