Description: Brian Hanson is a bladesmith located in Washington State. He worked for over a decade as a fine dining chef in various Seattle restaurants, but during Covid he made the decision to change careers and start working as a bladesmith. He now makes high performance kitchen knives that he hopes fellow chefs will love to use both at home and professionally in the kitchen.
The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is an exceptional general purpose chef's knife. It is perfect for slicing meats and proteins as well as chopping and dicing. Whether slicing onions, chopping vegetables, micing herbs, or portioning meats, this will be your go-to knife.
The damascus blade was hand forged from 1084 and 15n20 carbon steels to provide a high performance, long lasting edge. The damascus pattern is extremely engaging with lots of movement in the steel. The spine and choil have been softened to provide a comfortable grip. Brian's maker mark is on the right side of the blade. Because this knife is forged from carbon steels, we recommend camellia oil to oil the blade and natural wood handle.
The ambidextrous Japanese-inspired octagonal handle is African blackwood (Dalbergia melanoxylon). This dense, nearly jet black wood holds up beautifully to the demands of either a homer or commercial kitchen. A nickel silver spacer adds contrast. The handle is finished with a buffalo horn ferrule. This is a knife you won't want to put down!
