Description: David Tuthill has been a blacksmith for many years, creating elegant ornamental ironwork. Over the last few years, his attention to detail and skills in the forge have quickly brought him to create truly world class chef's knives.
A bunka is a Japanese general purpose chef's knife. Like the santoku, a bunka is a knife of many talents that can easily handle all the basic kitchen cutting tasks. Slightly shorter than the standard chef's knife, the bunka is light, agile, and very easy to maneuver. There's plenty belly curve to enable rocking cuts, which just adds to the bunka's versatility.
The blade is hand forged from David's own mosaic damascus, combining 1085, 1080, and 15n20 carbon steels. This ensures the knife will have excellent edge holding and chip resistance. A distal taper provides excellent balance. The spine and choil have been nicely rounded for comfort. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation. The blade is extra tall and will provide plenty of blade clearance even for the largest hands.
The bolster is integral to the blade with the damascus pattern flowing uninterrupted. Creating an integral bolster in a custom setting requires a particularly talented smith.
The handle is bog oak. This wood has been buried in a peat bog for hundreds or sometimes thousands of years. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with tannins in the wood, gradually giving it a distinct dark brown or black color. A silicon bronze spacer adds warmth to the handle. This is sure to be a knife you won't want to put down! Like other knives, this knife should not be put in the dishwasher.
