Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well suited for slicing vegetables, meats, and more. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 8 inches, it is a perfect size for either the professional or home chef. This chef's knife combines ultra-high performance with the easy care of stainless steel.
The blade is high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. The thin flat grind provides a very efficient cutting geometry with good food release. The spine and choil are nicely rounded for a comfortable grip.
The handle is formed from a beautiful section of presentation grade stabilized thuya burl. The hand contoured handle is equally comfortable in a pinch grip or a standard grip. Black paper Micarta and natural crosscut Micarta liners provide an elegant contrast to the thuya burl scales. This is a knife you won't want to put down!
Excellent work throughout!
