Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing, chopping, and mincing. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 7 inches, this knife is perfect for those that prefer a slightly shorter knife that is easier to control.
The san mai blade is hand forged 52100 carbon steel with wrought iron cladding. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. The top of the spine features a forged finish for better food release. The spine and choil are nicely rounded for comfort. Burke's touchmark is hand hengraved on the left side of the blade. His M.S. mark is on the right side. Because the blade is forged from carbon steel and wrought iron, we recommend using camellia oil to protect the blade and wood handle.
The handle is Chechen burl, set on the distal tapered full tang for strength and durability. Chechen is an exotic Mexican wood with warm butterscotch and caramel tones. It is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak at the end of the handle. The handle is perfectly fit to a polished 416 stainless steel bolster. Like other knives, this knife should not be put in the dishwasher.
