Description: Trevor Morgan Jr. of Apple Valley Forge resides in Apple Valley, California. He forges bowie knives, hunting knives, and high-performance chef knives. Taking classes led by renowned Mastersmith David Lisch has taken Trevor's work to an entirely different level of design and fit and finish. His integral kitchen knives are exceptional, with thin geometry and comfortable ergonomic designs.
A chef's knife is the general-purpose knife in the kitchen. From slicing tomatoes to chopping onions, this knife will get the task done perfectly. This 8-1/4" chef's knife is long enough to prepare most anything. It is sure to become a kitchen favorite.
Trevor began forging this integral chef's knife beginning with 1084, 1095, and 15N20 carbon steels. The complex mosaic damascus combines Spawn Chains at the top with a twisted mosaic edge. The combined steel is exceptionally dramatic. By forging closely to shape, he ensures optimal grain structure for a keen, long-lasting edge. The blade is beautifully thin with a nice distal taper for clean, perfect cuts. A convex grind assists food to release from the blade while slicing. This knife is extremely nimble and light for its size and build construction.
The bolster is integral to the blade, with the mosaic damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith. The bolster is carved to encourage a comfortable pinch grip.
The handle is stabilized exhibition grade amboyna burl. Amboyna burl is one of the most desirable woods used in knifemaking. It is well known for its beautiful swirling figure and desirable reddish tones. It is nicely contoured for a secure, comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. This knife will remain comfortable even after hours of use. Like other knives, this knife should not be put in the dishwasher.
Excellent work throughout!
