This chef's knife is likely to become the primary knife used in your kitchen. The sleek blade provides plenty of finger clearance while being extremely dexterous. The blade has a perfect shape for an efficient rocking chop. Whether chopping onions, mincing garlic, or slicing meats, this knife will be a perfect choice. This chef's knife is sure to become a kitchen favorite.
The damascus blade is hand forged, combining 1080/1084 powder with 52100 ball bearings to ensure excellent edge holding and chip resistance. The high contrast "spotted" pattern is extremely engaging. The blade is flat ground with slight convexity at the cutting edge for additional food release. The spine and choil are nicely rounded for comfort. Because the blade is forged from carbon steel, we recommend using camellia oil to protect the blade from rust.
The blade moves seamlessly into the integral bolster. This technique has superior structural integrity and requires a particularly talented smith. The left side of the bolster is stamped with his Japanese kanji touchmark. The right side features his M.S. mark.
The ambidextrous octagonal handle is polished carbon fiber. Carbon fiber is lightweight and holds up well to the rigorous demands of the professional kitchen. The pommel is hand engraved by Andrew with gold inlays. Like other knives, this knife should not be put in the dishwasher.
Excellent work throughout!
