A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
Carbon fiber handle scales are attached to the full tang using spanner-style bolts for easy removal and cleaning under the scales. Microtexturing on the surface of the carbon fiber provides traction even if your hands are wet. The handle is perfectly tapered, allowing either a pinch-style grip and a full handle grip.
The blade is crafted from CPM-MagnaCut stainless steel (61-63 Hrc) with a stonewash finish. CPM-MagnaCut is a super-steel designed by professional metallurgist Larrin Thomas and executed by Crucible Industries. An exacting chemical makeup gives MagnaCut an incredible balance of properties. As tough and durable as the strongest tool steels and as corrosion resistant as the best stainless steels, MagnaCut is the perfect choice in almost any knife shape or size. The powder metallurgy process refines the grain size and makes sharpening a breeze. Thin blade geometry and a full flat grind make this knife cut with almost no resistance.
A leather edge guard is included to protect the knife during storage and transport.
