Description: The Kumagoro ZA-18 Suminagashi Damascus San Mai Santoku is an exceptional all-purpose chef's knife. From meats, to fish, and vegetables, the santoku chef's knife is the perfect knife to grab. It is the traditional Japanese chef's knife. This comfortable design is a fantastic multipurpose chopper. The santoku style has quickly become the new favorite for chefs in the West. It is sure to become your go-to knife for a wide range of dicing, chopping, and slicing tasks.
Kumagoro's ZA-18 Damascus San Mai Chef's Knives feature a blade of exquisite beauty. Layers of alternating stainless steels (called damascus in the west - and suminagashi in Japan) surround a premium ZA-18 cobalt stainless steel core. Each knife is a unique design -- a true work of art. Aichi's ZA-18 was developed to out-perform Takefu VG-10. It takes and holds a razor edge -- ensuring a clean, effortless cut. It is hardened to Hrc 61 for superior edge retention. This gives the blade an exceedingly tough, long lasting and chip resist edge that is relatively easy to sharpen. A convex grind (hamiguri-ba) assists food to release from the side of the knife. The ambidextrous blade features a 50/50 grind.
The traditional Japanese "Wa" style handle is octagonal. It is equally well suited for left handed and right handed users. Traditional Japanese handles allow the knife to be lighter and more nimble. Natural ho wood is combined with black buffalo horn for a handle that will last a lifetime. Like other kitchen knives, this knife should not be put in a dishwasher.
