This chef's is the work of Washington native, Dale Miller. Miller's attention to detail shines through the elegant kitchen knife. The blade is formed from high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. Dale brought the steel to 62-63 Rockwell, ensuring a keen, long lasting edge. The blade features an S-Grind. A convex ground edge provides a high performance edge with lots of strength. From there, it moves into a concave and the blade moves toward the spine. This ensures exceptional food release. The combination ensures a high performing workhorse with virtually no resistance cutting through foods that would otherwise stick or wedge.
The contoured handle is formed from stabilized pink ivory (Berchemia zeyheri). Pink ivory wood is a vibrantly colored, dense, and extraordinary wood, considered by many to be one of the rarest woods in the world. Possession of the wood was once punishable by death if you were not a Zulu king. Looking more like scrub than a traditional wood, tree heights generally range from 20-35 feet tall with diameters of 6-12 inches. Due to its small stature, the yield is small, adding to the rarity of this species. Pink ivory is found scattered along the southeastern African plains. Only the heartwood produces the stunning color. A front spacer is formed from Resin-Ivory. Resin ivory is spun, polyester with resin-reinforcing agents. It is the highest quality imitation ivory available. The handle is completed with 10 coats of Tru-Oil. Like other kitchen knives, this knife should not be put in a dishwasher.
