Not only that, but the narow blade makes it easy to cut slices in a single pass, ensuring more of the juices -- and the flavor -- stay inside the meat. Because thie knife is long, slices will look great since there's no need to saw back and forth. That way you can be sure every slice is perfect.
The high performing blade is formed from damascus forged by Randy Hass. The blade is flat ground on the left side and hollow ground on the right, helping meats to effortlessly slide off the knife.
The handle combines dyed and stabilized masur birch with spacers formed from ancient walrus ivory. By using stabilized woods, Greger ensures the knife will hold up well to the high demands of either a home or commercial kitchen. This is a knife that will easily become a family heirloom.
The slicer is accompanied by a custom wood saya made from dyed masur birch wood. This helps protect protect the blade when it is not in use. A walrus ivory pin safely locks the blade in place.
