Description: Paring knives come in handy for all sorts of detail tasks around the kitchen. One of the most used, paring knives are great for anything like peeling fruits and vegetables, chopping garlic, taking the eyes out of potatoes, or removing the heads from tomatoes. The short, thin blade combines control and precision.
The beauty of the SLD line by Yoshikane is matched only by its performance. Each knife is meticulously hand forged by Mr. Tsuneo Yoshida and his two nephews to create a lasting work of functional art. These knives have quickly become a favorite at Epicurean Edge -- both for their feel and balance, as well as exceptional edge holding and performance.
The two tone blade is produced by two different etching processes creating a dramatic high contrast between the Kiriba (blade bevel) and the flat of the blade. This creates a smooth surface for the blade to slide through material and a subtly uneven surface to help release foods being sliced. The blades are comprised of a hard inner SLD stainless steel core clad in stainless steel damascus (suminagashi). Because SLD is a relatively low chromium stainless steel, we recommend drying the knife after use. The mesmerizing suminagashi pattern flows freely on both sections further enhancing the unique styling of this line.
The hand forged blade features a rounded Mune (spine) and choil for secure, comfortable grip. The 'D' shape handle fits comfortably and securely in the hand and is traditionally used by a right-handed user, though many left-handed users find this handle to be equally comfortable. It is formed from macassar ebony with a pakkawood ferrule. This wood holds up extremely well in the harsh environment of the kitchen. Like other kitchen knives, this knife should not be put in a dishwasher.
