Description: South African knifemaker David Hoehler specializes in chef's knives. Given that he worked in some of the best kitchens in South Africa for nine years, it is no surprise that he brings a unique understanding the chef's primary tool.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The 4-1/3 inch blade is made from 1070 carbon steel. An acid etch provides the appearance of a dramatic hamon. 1070 carbon steel will have exceptional edge retention and chip resistance. The blade is hollow ground and tapers to a thin, keen cutting edge. The spine is nicely rounded for a comfortable grip. Because this kitchen knife is made from carbon steels, it should be dried and oiled after use to avoid rust and oxidation.
The Japanese-inspired Wa style handle is formed from walnut wood. The ambidextrous handle provides a comfortable grip and keeps the knife extremely lightweight (only 1.2 oz!). A blue G10 spacer helps the natural wood adjust to humidity and temperature changes in the kitchen. A copper ferrule with a textured front completes the handle. Like other knives, this knife should not be put in the dishwasher.
To keep the knife protected during transportation, a brown leather sheath is included.
