Description: Forge to Table was started by chef Noah Rosen. Their knives are hand forged by a 3rd generation blacksmith in China. The steels used in the blades are made by Takefu Special Steel in Japan. Forge to Table knives bring an affordable, yet quality option to the world of culinary knives.
Utility knives are perfect for slicing fruits, vegetables and meat, as well as performing other detail tasks such as removing silver skin from meat. The thin blade is longer than a paring knife and has a thinner profile than a chef's knife.
Forge to Table blades are hand forged from premium Japanese VG10 san mai stainless steel with a kurouchi (blacksmith's) finish. VG10 takes and holds a razor sharp edge -- ensuring a smooth and effortless cut. This gives the blade an exceedingly tough, long lasting and chip resist edge that is relatively easy to sharpen. A hollow grind provides thin geometry and an easy to touch up cutting edge. The blacksmith's kurouchi finish helps food release from the side of the blade.
The Japanese style octagonal handle is made from African padauk (Pterocarpus soyauxii) with a buffalo horn ferrule. It is comfortable for both right and left handed users. Padauk wood will hold up extremely well in the harsh environment of either a professional or home kitchen. Like other kitchen knives, this knife should not be put in a dishwasher.
