Description: The chef's knife is the primary knife used in the kitchen, easily handling almost all culinary tasks. This chef's knife by Dale Miller is light, agile, and very easy to maneuver. This chef's is the work of Washington native, Dale Miller. Miller's attention to detail shines through the elegant kitchen knife. The blade is formed from high performing 52100 carbon steel. Many knifemakers and metallurgists feel that 52100, with its small crystalline size, tremendous edge stability and toughness, is among the best carbon steels used in knifemaking today. Dale brought the steel to 63 Rockwell, ensuring a keen, long lasting edge. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The blade features an S-Grind. A convex ground edge provides a high performance edge with lots of strength. From there, it moves into a concave and the blade moves toward the spine. This technique lightens the overall weight without sacrificing strength. The combination ensures a high performing workhorse with virtually no resistance cutting through foods that would otherwise stick or wedge.
The contoured handle is formed from African blackwood (Dalbergia melanoxylon). African blackwood is a member of the rosewood family. Considered the world's best tonewood, it is used for woodwind instruments such as clarinets, oboes, and piccolos. The resilient wod is a deep brown-black. Ensuring it will hold up well to the heavy demands of either a home or commercial kitchen, this wood was sanded to 2500 grit, and finished with multiple coats of Birchwood Casey Tru-Oil. A front spacer is formed from stabilized camel bone. Like other kitchen knives, this knife should not be put in a dishwasher.
