Description: South African knifemaker David Hoehler specializes in chef's knives. Given that he worked in some of the best kitchens in South Africa for nine years, it is no surprise that he brings a unique understanding the chef's primary tool.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is a perfect choice as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this nimble knife will do it all. The gentle curve of the cutting edge is perfect for a rocking chopping motion with just enough finger clearance over a cutting board.
The 5-3/4 inch blade is made from high performing N690 stainless steel. N690 is made by Bohler in Austria. It takes an incredibly sharp edge and holds on to it. Increased toughness gives it better resistance to edge chipping. The blade is meticulously flat ground for precise slicing and has a razor sharp edge. A hand rubbed satin finish lends an heirloom quality to the knife.
The handle is formed from dyed and stabilzed maple burl. The front of the handle scales is sealed with a 304 stainless steel bolster. Handle scales are set to the full tang with two hidden bolt rivets. The stabilized wood will hold up beautifully to the high demands of either a home or a commercial kitchen.
