Description: I was tremendously pleased to meet bladesmith Dave Skinner at the 2019 Guild Show of Southern Africa. Dave brings a refined eye and tremendous skill at the forge to his knives.
This Japanese-inspired chef's slicer is a tremendous knife. At 1.55 inches tall, it has just enough height to be used as a primary chef's knife, though it will excel when used as a sujihiki. This slicing knife will make quick work of slicing meats and vegetables. It is sure to become a goto knife in your kitchen.
The blade was forged to shape from K110 semi-stainless steel. K110 is Bohler's version of D2 -- a steel which is well known for its long lasting, high performance edge. It is a semi-stainless steel and while it has some rust resistence, it is a good idea to dry off after use. The trade-off of slightly more care in exchange for much higher performance is worthwhile to most users.
Like the blade, the handle is inspired by Japanese knives. The octagonal shape is extremely comfortable. The dense African blackwood used for the handle will hold up well to the high demands of either a professional or home kitchen. A front spacer is formed from white Corian. The front of the handle is sealed with a stainless steel 'bolster'.
