Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. At 8-1/4 inches, it is a perfect size for either the professional or experienced home chef. This chef's knife combines ultra-high performance with the easy care of stainless steel.
The blade is formed from high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. The convesx grind provides a very efficient cutting geometry with optimal food release. The spine and choil are nicely rounded for a comfortable grip.
The contoured handle combines black G10 with cocobolo (Dalbergia retusa). The combination of the G10 and beautiful natural wood is extremely engaging. Cocobolo is one of the most desirable woods used in knifemaking and this naturally resinous wood will hold up well to the hard demands of either a professional or home kitchen. G10 liners and red fiber spacers help the wood adjust to humidity and temperature changes. The handle is beautifully shaped for a secure comfortable grip. This is a knife you won't want to put down.
