Description: Washington knifemaker, C. Luis Pina, is an exceptional bladesmith and specializes in kitchen knives. He apprenticed under Mastersmith David Lisch. David's eye for design clearly shines through Luis' work on this tremendous slicing knife. Luis' past career as a chef provides him with an understanding of chef's knives that is rarely found in other bladesmiths.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The blade on this gyuto was hand forged to shape from W2 carbon steel. A mustard patina provides some rust resistance and tremendous beauty. The convex edge will assist with food release and the rounded spine provides comfort when using a pinch grip.
The handle is contoured from brown canvas Micarta perfectly fit to the integral bolster. Black fiber spcaers add contrast. Integral bolsters have superior structural integrity but require a particularly talented smith to make one in a custom setting. The bolster is carved to encourage a comfortable pinch grip, though the handle is aso exceptionally comfortable when held further back. The handle is carved to swell at the palm, move into a slimmer waist and swell again at the end of the handle. This is a knife you won't want to put down!
