Description: Journeyman Smith Jim Arbuckle resides in Yorktown, VA. He started making knives in 1979 and has been forging knives since 1996. Growing up in Washington State, he spent most weekends hunting and fishing and has a great understanding of what features make a knife perform well. This fillet knife is inspired by the Norwegian gutting knife and will handle filleting, gutting, and deboning tasks well.
The blade is made from high performing, low care 154CM stainless steel and has an heirloom quality hand-rubbed satin finish. It was hardened and triple tempered to Rc 59-60 for excellent edge retention. The distal tapered blade creates a perfect balance. The blade will have a tendency to center on the fish and reduces the effort needed to smoothly guide the blade over the ribs. The shape is also very handy when removing fins.
The Dymalux stabilized wood handle has a very deep choil (cut-out) for the forefinger to rest in. This makes the knife easy to hold – even with slippery, wet hands. The grips are secured with nickel silver pins. By using Dymalux, Jim Arbuckle ensures the handles will hold up to the heavy demands of outdoor use. The scraper (spoon) on the rear of the knife is shaped to be optimal for cleaning along the spine of salmon and other large fish.
The knife includes an 8" Messermeister Edge-Guard for easy and safe storage and transport.
This is a nice workhorse for heavy duty fish and meat processing. It is meant to be used, and built to last a life time.
