Description: This exceptional slciing knife is made by Steam Mill Hollow Knife Works. SMHKW was started in 1990 by Don Hanson III, his father (Don Hanson II), and Don's brother David. The Hansons live in Steam Mill Hollow Missouri, deep in the Ozarks. After a few years they each went back to doing their own stuff. Recently David and Kyle (Don's son) started working in Don's shop and they decided to revive the old brand. The collaborative effort is exceptional!
Slicing knives are a key knife in the kitchen. Whether slicing and portioning meats, removing silverskin, or carving a turkey, this slicer will be the right knife to grab. Extremely sharp, this Japanese-inspired slicer is also well suited to preparing sushi and sashimi. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation. Like other knives, this slicing knife should not be put in the dishwasher.
The blade of this slicing knife is made from 15N20 carbon steel, ensuring a keen, long lasting edge. The flats are forge finished. A differential heat treatment ensures a resilient, durable blade.
The ambidextrous, octagonal handle is inspired by Japanese chef's knives. Stabilized Missouri black walnut is combined with ebony for an elegant, durable grip.
