The gyuto is modeled after the French pattern chef's knife. This is the essential kitchen knife. Longer and slimmer than the santoku, it is the general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right. Additionally, this knife has plenty of finger clearance for the rocking chop needed to chop onions and other vegetables.
The blade is formed from high performing Nitro-V stainless steel with a hand rubbed satin finish. Nitro-V is a martensitic stainless steel with a chromium-based composition created by the New Jersey Steel Baron company. Nitrogen and vanadium have been added to the composition of AEB-L to improve edge performance. The resulting blade has an extremely keen, long-lasting edge and is just as tough or tougher than similar carbon steels while being completely stainless. The blade is distal tapered, ensuring a perfect balance. The spine is nicely rounded so it is extremely comfortable even when used for many hours at a time.
The ambidextrous traditional Japanese-inspired octagonal handle is formed from ancient red gum (Eucalyptus camaldulensis) wood. Thousands of years ago, when the Egyptians were building the Pyramids, the River Murray altered its course at the end of the last Ice Age, undermining the great red gums which grew along its banks. These trees toppled into the gravelly stream, were buried, and lay for centuries gradually absorbing the earth’s minerals and metamorphosing into dense, ebony black timber. The wood used in this handle radiocarbon dated at more than 7,500 years old. A nickel silver spacer seperates the handle from the matching ferrule.
Excellent work throughout!
