Description: Prior to starting Sea Rose Knifeworks, Sasha Rosenfeld was a professional cook in Seattle for 15 years. When he made the move from chef de cuisine to stay-at-home dad and part time prep cook, he began taking blacksmithing classing and began forging his first kitchen knives in his backyard while he daughter was napping. In the fall of 2018, Rosenfeld decided to step away from professional kitchens for good and opened Sea Rose Knifeworks.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade was hand forged from 1084 carbon steel. It has tremendous, thin geometry and will effortless slice and chop. A hand rubbed satin finish lends an heirloom quality. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The handle is contoured from Arizona desert ironwood (Olneya tesota). This, dark toned wood has a swirling figure and lighter hints. Alternating nickel silver and black G10 spacers assist the handle to adjust to temperature and humidity changes in the kitchen. This is an extremely comfortable handle. You won't want to put it down, even after hours of use.
