Description: James Oatley (Oatley Knives) is a talented bladesmith from Sydney, Australia. The grandson of a butcher, James had an interest in knives from a young age. He builds knives intended for serious use, clearly influenced by the high performance culinary knives of Japan. He has a high attention to the fine details and is clearly a maker to keep an eye on!
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board.
The Yu-Shoku blade was hand forged in a technique known as san mai (three layers). Undulating, brightly colored brass, copper and stainless steel surround a V-Toku2 carbon steel core. V-Toku2 is a 'super-steel' created by Takefu, in Japan. Very high in carbon content (approx. 1.1%) this steel holds and takes an amazing edge. The effect created by the mokume gane walls is extremely captivating! The sides feature a darkened kurouchi forge finish with texturing to help facilitate food release. The spine and choil have been nicely rounded for comfort.
The traditional handle is made from dyed and stabilized maple burl shaped to accomodate a comfortable pinch grip. A copper ferrule adds warm tones which nicely complement copper in the blade. The balance feels exceptional on this deep bellied chef's knife.
A custom wooden saya with a copper pin is included to protect the knife during storage. Oatley's logo is burned into the side of the saya.
